Carob is a nutritionally complete fruit and its nutritional value is remarkable. It is rich in fibers, polyphenols and tannins which provide its antioxidant properties. Although it is rich in natural sugars, it is low in calories, fat, gluten-free and caffeine free. Carob is rich in vitamins A,B and D, calcium, phosphorus, potassium, carbohydrates, protein, magnesium, and various metals. It is consumed raw as a fruit. This is a dried product and therefore is naturally hard. Be careful with the hard pods, and the carat seeds should not be eaten. If you wish to soften the carob pods they may be soaked overnight in previously boiled water.
